Stir Fried Pumpkin with Eggs is an alternative recipe for people who would like to cook pumpkins in a different way. I originally created this recipe in 2014 and I updated this blog in 2020. I didn’t change or edit any parts of the recipe as the Youtube video has been out there since 2014. But, since I migrated my blog posts, I think it is a good time to update my thoughts on this dish. As you can tell, this dish is one of the most popular dishes on my YouTube. Thank you for all the support. This Stir Fried Pumpkin with Eggs recipe is Thai cuisine; therefore, you can cook Thai food at home with easy ingredients. For me, this dish is a comfort food. We cook many ingredients this way with eggs. We also use gourd and zucchini to stir fry with eggs as well. We eat this with steamed jasmine rice. Ingredients of Stir Fried Pumpkin with Eggs:
1 two-handful pumpkin
½ tablespoon of chopped garlic
2 tablespoons of water
½ tablespoon of granulated sugar
2 tablespoons of soy sauce
Cooking Directions for Stir Fried Pumpkin with Eggs:
1. Heat up the skillet with medium-high heat, add olive oil, and garlic. Stir until you smell garlic.
2. Add eggs and stir. When the egg white is partially cooked, add pumpkins and add soy sauce.
3. Keep stirring until the eggs are cooked, then add water to make the pumpkins softer. Then, add sugar and keep stirring.
4. Serve Stir Fried Pumpkin with Eggs with steamed rice.
